TARTARE OF TUNA


I absolutely love this recipe, packed full of delicious flavour, easy to prepare, vibrant and tastes sublime, As I keep saying, please use the freshest of the freshest fish,

I'm using tuna, but by no means is that set in stone, try salmon, sea bass, scallops, halibut, mackerel, speak to your fishmonger



SHOPPING LIST


  1. 2 teaspoon of toasted sesame seeds

  2. 2 teaspoon of lime juice

  3. 2 teaspoon of sesame oil

  4. 2 teaspoon of wasabi paste

  5. 200g of fresh tuna ( or fish of your choice) cut into small dice

  6. Asian style Pesto

  7. Asian Style Pesto (recipe below)

  8. A large handful of fresh coriander

  9. A small handful of fresh mint

  10. 2 spring onions chopped

  11. 1 red chilli chopped

  12. A piece of fresh ginger grated

  13. 2 cloves of garlic

  14. A good splash of sesame oil

  15. A good splash of light soy sauce

  16. A good splash of lemon juice

  17. A pinch of sugar

  18. A pinch of salt


Basically, but all the ingredients for the Pesto into a blender, and blitz to a smooth sauce!! Job done


Now for the tartare


METHOD

1. In a bowl mix together the wasabi, sesame seeds, sesame oil and the lime juice

2. Add in the fish you are using and gently mix together to coat completely

3. Leave to infuse the flavours for 5 minutes

4. Divide the mix between two plates

5. Spoon some or the Pesto around each plate

6. Finish with some Thai basil and more toasted sesame seeds
