Spiced Spanish Pork Shoulder Skewers


There aren't many cuisines that don't have some form of grilled meat on a stick!

The Greeks have soulvaki, Malaysian satay, Japanese yakitori, and they will all have their own inventions depending on what part of the world you are in

So these pork skewers have a slightly Spanish flavour, If you like a good Chorizo, then you'll love the spices in this recipe


You can make and cook these straight away, however, I really urge you to marinade the meat over night for a fantastic flavour


This recipe will make 6-8 skewers

Prep time 20 minutes

cooking time 10 minutes


Ingredients


4 cloves of garlic finely grated

A good pinch of salt

A good pinch of sugar

1 Tablespoon of sweet paprika

1 Tablespoon of hot spiced paprika

4 bay leaves finely chopped

1 Tablespoon of ground cumin

A good splash of vegetable oil

500g of diced pork shoulder, into about 1 inch cubes



Method

1. In a bowl mix all the marinade ingredients together, add the pork, mix well and leave in the fridge over night

2. If you are using wooden skewers, soak them in water to prevent burning

3. Remove the pork from the fridge and allow to come to room temperature for about 30 minutes

4. Now thread 5-6 pieces of marinated pork onto each skewer

5. Lightly brush each skewer with a little oil

6. Obviously the best way to cook the skewers is over charcoal, but you can cook them in a griddle pan, or under the grill, turn occasionally so you get an even cook, about 5-6 minutes should be perfect


And the skewers are ready to serve
