Crab Linguine


Now it sounds pretty simple, and in fairness it is, but, and here's the but! There are a number of things I'm going to insist on, firstly I urge you to have a go at making your own pasta! I can't emphasise enough how thoroughly chuffed you will be that you've made your own, go on give it a go And secondly the "sauce" should be warm! Gentle heat, I can't over state this enough, don't over heat it, you'll totally lose the fantastic tomato, crab and basil flavourI'm using crab, but as with all my recipes you can use different things, crab, lobster, mussels,clams etc This is a great simple, few ingredients dish, try it as a light lunch, supper or a nice little starter

For the pasta


Now I would love you to make your own pasta, but if you don't have time then a good quality bought one is fine


225g plain flour

Pinch salt

2 medium eggs

4 medium egg yolks

Splash of olive oil


Method


1. Place all the ingredients into a food processor and pulse until it comes together 2. Knead for 10 minutes, wrap in cling film and rest for 10 minutes 3. You can now use on your pasta machine


For the recipe

400g of pasta

6 vine ripened tomatoes, the softer the better, chopped into quarters Handful of fresh basil

1 clove of garlic, finely chopped

1 red chilli, finely chopped

1 lemon, zested and juice

400g crab meat

Good splash of olive oil


Method


1. If using dried pasta, cook in boiling salted water for approximately 8 minutes, if you're using fresh pasta this will only take 2 minutes!!! Max!!

2. In a warm pan place the garlic, chilli and tomatoes with the olive oil and warm gently

3. After 2 minutes add the crab meat and lemon zest and warm

4. Drain the pasta and add this to the crab meat

5. Squeeze in the lemon juice

6. Season to taste

7. Serve immediately and finish with torn basil
